I just threw together some cabbage, onions and carrots and a couple cans of corned beef. Seasoned well and tastes great.
 
How exactly? Frying pan with a lid?
not exactly. I put the cabbage, onions and carrots in a large pot with some broth and seasonings and cooked them. Then drained the pot and added the canned corned beef and stirred it up good. Then I let it sit for a bit before serving.

This was just a hurry up meal using some leftover things.

Pasta vongole. But with the wrong pasta.
i love vongole so much i'm happy to eat them with any pasta. ideally we'd use linguine, but spaghetti is ok.

.. let's be honest, we're not that serious about pasta shapes. Maybe some guys freak out if you put their bolognese on fettuccine instead of tagliatelle, but around Rome, we eat spaghetti anything. Spaghetti bolognese, spaghetti vongole, spaghetti amatriciana, whatever man.
 
Looks good but I'm curious what the cucumber salad is for? Not judging just wondering because in my small little part of the world tacos are never served with cucumbers.
That was purely because my daughter really likes cucumber!

There's a little bowl there that has a dressing made of finely grated fresh ginger, crushed fresh garlic, fresh lime juice, chopped fresh chilli, nam pla (Thai fish sauce), and oil (ideally sesame but that's a bit strong for this meal) that is so not mexican but is fucking amazing on fish. I would absolutely recommend!

Good "long" pasta is probably my favourite thing, as long as it's cooked properly. It's a simple thing that's amazing cooked well but infuriating if it's not!
 
I decided to make a kitchen sink soup.

I bought a pack of 6 good sized chicken thighs and decided to make some soup.

I had a fair amount of ingredients hanging around so I decided to combine them all.

First I made stock. Various herbs and spices as well as some onions, carrots, garlic and celery and added the chicken thighs and simmered that for nearly 2 hours. Smelled amazing.

Then I removed the thighs and strained the stock. I let them cool down a bit then removed and shredded the meat.

With the stock now in my stock pot, I added my wilting veggies from the fridge. Celery, 2 garlic cloves minced, carrots and onions. I also added 1/2 a head of cabbage, the chicken meat, some frozen peas/carrots mix, some frozen corn kernels and a leftover half bag (1 lb) of baby shells.

It smells incredible in here.
 
I've been making quick and easy salmon filets in the air fryer. So fast, no need to defrost first. Costco has a bag of frozen wild caught salmon filets which are individually wrapped in the bag. Super amazing for a quick and healthy meal.
 
My stomach just growled at me as soon as it saw the spread. Now I am famished.

I apple wood smoked a bunch of chicken thighs. Use the leftovers for Brunswick stew and BBQ beans. I get the big coleslaw kit from Sam's Club, and make it sweet and tangy style.

Grilled chicken breast with Cajun seasoning for wraps with spring greens and keto tortillas.

Grass fed smash burgers in the cast iron skillet with choice of pepper jack, cheddar, colby jack, swiss, on toasted brioche buns. As much as I enjoy a thick, juicy burger, sometimes a double smash burger with pepper jack, sweet onion, butter lettuce, flavor bomb tomatoes, members mark pickle chips, spicy brown mustard, mayo, and ketchup made with cane sugar, just works.
